Cakey Clean Brownies
Tonight I made some AWESOME brownies from scratch thanks to a post on instagram @jazzythings. The best part is her secret ingredient (black beans..yes BEANS!!) that is so well hidden the hubby couldn't tell and gobbled them right up. I also love these because I can give them to baby girl guilt free knowing she is getting a clean treat. Anytime I can sneak a protein or veggie into her food is a win in the Spoon household! These came out more cake like than fudge like but were still delicious. Oh and I made them even more scrumptious by adding a tad bit of PB2 on top. Peanut butter on chocolate is the best!
Here is the recipe:
1 (15oz.) can black beans, rinsed and drained
1/3 c. melted coconut oil
2 eggs
1/2 c. cocoa powder
1/4 c. honey
1/4 c. sugar or coconut sugar
1 tsp. vanilla
1 tsp. baking powder
1/3 c. oats (made into flour texture, or oat flour)
Mix all ingredients in food processor or blender. Pour into a greased 8x8 pan and bake @ 350 degrees for 25 min.
