Just a few months ago my little one would eat anything I put in front of her. Those were the days. Now it's a challenge for me to get her to eat veggies at all so I have to get extra creative. She adores fruit and would eat it day and night if I let her but that just won't work. So off I went to create a recipe using veggies and some of her other fav foods like eggs and cheese. I am masking the veggies for now as best I can with whatever I make. These are Oatzini Muffins with zucchini in them. I have traded in my flour cooking days for oat flour. I make the oat flour by grinding up whole oats in a magic bullet. It works in just about anything which is nice and healthier. I am a little obsessed with oats lately! These were easy to make and plenty of leftovers which means I can give them to her quickly!
OATZINI MUFFINS
4 eggs
2 c. grated zucchini
3/4 c. romano cheese
4 green onions chopped
3/4 c. oat flour (whole oats ground up)
3/4 tsp. baking powder
1/2 tsp. sugar
1/2 tsp. salt
Mix it all together and pour in greased, sprayed, or lined muffin tins. Bake @ 350 for 20 min or until golden brown. Cool and enjoy.
