I rarely use coconut flour for pancakes but they really made them so fluffy and light. Coconut flour isn't the cheapest healthy flour but it does taste really good. I switch between oat flour and coconut flour for all my pancakes. To get a smoother creamy topping just use a hand blender. I have a magic bullet and use it to make my oat flour and cream toppings like this.
Lemon Raspberry Pancakes
1/2 C. Oats
1 Tbsp. Coconut Flour
1 tsp. Baking Powder
1/2 Tbsp. granulated sweetener
1/2 tsp. Lemon Zest
1 Tbsp. Greek Yogurt
2 Tbsp. Unsweetened Applesauce
2 Egg Whites
Cream Topping:
1/3 C. Greek Yogurt
1/3 C. Cottage Cheese
1/2 tsp. Vanilla Extract
1/4 C. Raspberries
The chocolate peanut butter topping makes it so delicious and hits that sweet spot. I use Peanut Butter & Co. Dark Chocolate Dreams. It's amazing. It has no cholesterol, no trans fats, no hydrogenated oils, and no high-fructose corn syrup and it's gluten-free. My favorite thing to do is share one of these with the little one (the non protein powder one of course).
Before it went in the oven. Topped with coconut flour.
Baked Banana Peanut Butter Oatmeal
1/2 C. Oats
2 Egg Whites
1/4 C. Milk
2 tsp. Granulated Sugar
1/4 tsp. Baking Powder
1/2 Banana sliced (or more if desired)
1 tsp. Coconut Flour
Sprinkle of Cinnamon
Spoonful of Chocolate Peanut Butter
Mix all ingredients but the coconut flour and chocolate peanut butter. Place in a greased ramekin and sprinkle coconut flour on top. Bake @ 350 degrees for 30 minutes. Top with chocolate peanut butter or eat as is!
Yum!! Those both look delicious! Where do you find coconut flour? Health store or am I just not looking well enough at the regular grocery store?
ReplyDeleteYes at our local market that carries many healthy natural foods. A sprouts, Whole Foods or something similar always seems to have it in stock. It's pretty dang pricey but if you use it on occasion it's worth it. You could also use almond flour or make your own oat flour.
