Pumpkin Cream Cheese Pancakes

Well since it's officially fall (even though the current temps still scream summer), it's pumpkin time!! I decided to make some pumpkin cream cheese pancakes for breakfast to get into the fall spirit. I opened up a can of pumpkin puree and have been making so many things with it. I can't get enough quite yet! The cream cheese topping just makes it that much yummier! The topping isn't healthy but what's wrong with some sugar now and then?!

Pumpkin Cream Cheese Pancakes
1 C. oats (ground into flour)
2 Egg Whites
2 T. Milk
1 T. coconut flour (can make without)
1/3 C. pumpkin puree (or more..I didn't officially measure)
Sprinkle of pumpkin pie spice
Splash of vanilla

Mix up and cook up like usual pancakes. Sometimes I throw a few dark chocolate chips in there to make it more fun because chocolate and pumpkin go ohh so well together!

Cream Cheese Frosting
2 T. Cream Cheese
Splash of milk
Powdered Sugar (enough to make it taste as sweet as you want)
