Carrot Cake Oats with Vanilla Cream

I saw this posted by @tastyhealth, her recipe and post found here and knew we had to have it for breakfast. This is a delicious and filling! We eat a lot of oatmeal so this was a great change from the normal maple or apple cinnamon kind. The kiddo loved it but the hubby not so much. He isn't big on carrot cake anyways so I can't blame him. Oh and the kiddo got her carrots in..BONUS!!



Oats:
1/2 c. oats
shredded carrot (eye ball it)
1/2 tsp. cinnamon
1 Tbsp. granulated sweetener
2/3 c. water
1/4 c. milk
1 egg white

Put all ingredients in a pot and cook for a few minutes. Add the egg white and stir quickly so it does not get lumpy. Cook another few minutes and remove from heat. Cool and serve or put in the fridge overnight. 

Vanilla Cream:
1/3 c. cottage cheese
1/3 c. plain greek yogurt
2 tsp. granulated sweetener
1 tsp. vanilla extract

Mix with a hand blender to get a smooth consistency. Serve on top of oats and enjoy!
